Sorbic acid potassium is a colorless to white scaly crystal or crystalline powder, odorless or slightly odorous. It is unstable in the air and can be oxidized and colored. Its molecular weight is 150.22. It is hygroscopic and easily soluble in water and ethanol. It is mainly used as a food preservative, belonging to acidic preservatives, and its antiseptic effect is improved when used in combination with organic acids. It is prepared from potassium carbonate or potassium hydroxide and sorbic acid.
Sorbic acid (potassium) can effectively inhibit the activity of molds, yeasts and aerobic bacteria, thus effectively extending the shelf life of food and maintaining the original flavor of food. It is widely used in food, beverage, tobacco, pesticide, cosmetics and other industries. As an unsaturated acid, it can also be used in resin, perfume and rubber industries.
